Cheese Straws

Wow! These are so simple and easy to make, and they are a great addition to any party buffet. One batch makes about 24 long straws, if you wish to make more, make each batch separately. This is one recipe where you really have to use a food processor to get the best results.

Cheese Straws Recipe

  • 1 cup ( 4 oz – 120 gm) all purpose white flour
  • 1/2 cup (4 oz – 120 gm) butter, chilled
  • 2 ounces old Cheddar cheese, grated
  • 2 ounces grated Parmesan cheese
  • dash of Tabasco or hot pepper sauce
  • 1 tsp (5 ml) mustard powder
  • 1 egg
  • 1 beaten egg for glazing

Cut the butter into small pieces and place in the food processor with all the other ingredients, apart from the egg for glazing.

Process until everything comes together as a dough.

Roll out on a floured surface to 1/8″ or 3mm thickness and cut into strips about 3/8″ or 1 cm wide.

Place on parchment paper or a Silpat and brush with the beaten egg.

Bake at 350°F or 180°C for 12 to 15 minutes until golden-brown.

Allow to cool slightly before placing on a cooling rack.
