These are beautiful cookies with a nice festive look from the glacé cherries and the scrumptious taste of coconut and chocolate!
Chocolate Cherry Cookies Recipe
- INGREDIENTS:
- 1 cup (8 oz – 227 gm) butter (room temperature)
- 1 cup (6 oz – 170 gm) semi-sweet chocolate chips
- 1½ cups (13¾ oz – 390 gm) white sugar
- 2 large eggs
- 1½ cups (9 oz – 255 gm) coconut flakes
- 1 tsp (5 ml) almond extract
- 2 cups (7¾ oz – 220 gm) all-purpose white flour
- 1½ cups (4½ oz – 125 gm) glacé cherries, coarsely chopped
- 1 tsp (5 ml) baking powder
- 1/4 tsp (1.25 ml) salt
METHOD:
Preheat oven to 350°F (180°C)
Cream the butter and the sugar together until well blended.
Beat in the eggs, followed by the almond extract.
In a separate bowl, combine the flour, baking powder and salt.
Gradually add the flour mixture to the liquid ingredients, beating at low speed until just mixed.
Stir in the chocolate chips, cherries and coconut flakes.
Drop the dough in small spoonfuls onto greased baking sheets.
Bake for 12 – 15 minutes, until lightly browned around the edges.
