A really festive cookie that is actually great at any time of the year. We have used our Cranberry Mincemeat but the recipe is just as good using store-bought mincemeat.
Mincemeat Cookies Recipe
Preheat oven to 350°F or 180°C.
Cream the butter and sugar together and gradually add the eggs.
Dissolve the baking soda in hot water and add to the mixture. Stir well.
Sift the flour and salt together and then mix into the batter.
Stir in the mincemeat and chopped pecans.
Use a teaspoon to drop the dough in small rounds on a cookie sheet covered with parchment paper or a silicon sheet.
Bake 14 – 16 minutes until the cookies start to brown.
Makes 4 – 5 dozen cookies.
